Beefy Bratwurst

A fine bratwurst made from lamb and beef. Will have an eastern touch if you add some cumin. This sausage should be grilled only a short time, otherwise it will get dry and crumbly.


50% lamb 
50% beef
20 mm casing

Spices per kg:

20 g salt
10 g black pepper
15 g Aleppo pepper
2 g cumin (optional)
0.5 g pimento

2 garlic  cloves
2 - 3 hot chillies
0.3 g lemon zest
