Pochies - Pork and Chilli

Pochies are sausages made from pork and chilli (who would have thought that). Simply minced with the 10mm disk and spiced. The chillies should be dark red and very mild to give the sausage a fruity flavour and a nice texture. Add one or two hot ones to get them as spicy as desired.


40% pork belly
60% pork knuckle
pork casing

Spices per kg:

18 g salt
6 g white pepper
1 g mace
1.5 fresh ginger
0.3 g lemon zest
20 g sweet or mild chilli
2 garlic cloves
1 or 2 hot chillies
