Still under development, we are not there yet...

Our first recipe. Very spicy, a little bitter (probably because of too much cumin). The large amount of ground (powdery) spices makes it a bit floury. It's a good sausage but not perfect.

Ingredients

40% lamb
60% beef
beef casing

Spices per kg:

25 g salt
40 g mild paprika ground
25 g cumin
1.5 g pimento
6 g black pepper
10 g pul biber
15 g aleppo pepper
60 g garlic


Out next try, less of the ground spices, less cumin. More of the coarse ground spices. This should make the sausage less floury and remove the bitterness:
